I wish I could’ve been around for the release, I would’ve grabbed one of each of them for sure. The palate is concentrated with flavor and it carries over to the finish pretty well. The distillerys signature Tennessee High Malt recipe known as Barrel 91 was selected from the first 100 barrels produced at an Experimental Distillery. Made from the finest malted grains, each step of the process has been crafted to highlight the complexity of these ingredients. This is a great whiskey! It is not mind-blowing, but it is surely delicious and one that I could drink all of the time. Tennessee High Malt is a rich, malt-forward approach to bourbon. After a minute or so, a note of oak spice develops on the back palate. The finish is medium-long and filled with notes of honey on the mid-back palate, cherries on the mid-front palate, biscuits on the side of the palate, and bread on the mid-back palate. I also get notes of black pepper on the sides of the back palate, as well as a hint of syrup on the front palate. 1816 Solera Barrel Finished (90 Proof and No Age Statement) Close. I immediately get a burst of honey on the mid-palate, followed by light notes of cherries on the back palate and orange rind on the front palate. We talk about bourbon, rye, or any American whiskey here (yes, even Jack). More oak and rye greet you on the nose, this time followed with wafts of toffee. The nose is rich and filled with notes of honey, biscuits, dried cherries, baker’s sugar, a very light note of orange rind, and oak. At a bold 113 proof, 1816 Cask touts tremendous intensity and rich flavors.
